AEO, SEO or GEO: which should you actually do first?
Three acronyms, one largely shared body of work, and a genuine question about sequencing underneath the marketing.
What the three actually mean
SEO targets a position in a list of links. AEO targets being the answer an assistant gives. GEO is generally used to mean the same thing as AEO, with a different marketing origin.
The distinction between the last two is not worth your attention. The distinction between the first and the others is real but smaller than it is sold as.
The order for a local business
First, the Google Business Profile. For a business people search for locally, the map results sit above everything and are decided largely by the profile. This is the highest return work available and it is frequently half finished. Why the profile beats the website covers the reasoning.
Second, conventional search fundamentals. A site that loads, that names its service area explicitly, that answers real questions, and that has consistent details everywhere.
Third, answer engines. Which by this point is mostly a matter of structure and consistency, because the substance is already there.
Why that order
Because each stage is a prerequisite for the next rather than an alternative to it.
Assistants draw on sources they can find and corroborate, and your Google profile and ordinary search presence are among the most reliable sources about you that exist. Doing answer engine work on a business with a neglected profile is building the roof first.
The exception
If you are in a genuinely crowded category where conventional rankings are dominated by established competitors, the answer engine lane is less contested and worth weighting earlier.
That is a real strategic argument. It is not an argument for skipping the profile, which takes an afternoon and pays back faster than anything else on the list.

You need someone who understands it, not a separate contract. Being sold it as an additional retainer on top of existing search work is usually being sold the same work twice.
